Making Bryndza in Gagauzia, in a farm and homemade
Brinza (Bryndza) is the traditional cheese of Moldova that you will always find in the tables of the Gagauz families. It is made with goat, sheep or cow milk.
“In Chirsova brinza is the product that every family has at home and everybody eats it. When we have a guest the first meal on the table is brinza and bread”, says Masha Mesheoglo who has been making brinza for 25 years at her home in Chirsova for all the family.
“If you find Gagauzia in the map you have to know three traditional things: Wine, kaurma (sheep meat) and brinza”, says a farmer from Tamai who makes 70 kg of brinza per day and sell it in the bazar of Comrat.
